  • 7 cups thinly sliced russet potatoes
  • 1 lb ground turkey sausage (cooked and crumbled)
  • 6 cups chopped kale leaves
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 large egg (beaten)
  • 1.5 cups shredded Parmesan cheese
  • 1 small white onion (peeled & diced)
  • 2 tbsp garlic paste
  • 1/2 cup flour
  • salt & pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Layer the sliced potatoes and cooked ground turkey sausage in a greased 9×13" baking dish.
  3. In a large skillet, sauté diced onions and garlic paste until softened, then add chopped kale until wilted.
  4. Sprinkle flour over the mixture, stir well, and gradually whisk in chicken broth; simmer until slightly thickened.
  5. Stir in heavy cream and temper the beaten egg before mixing into the skillet.
  6. Add half of the Parmesan cheese to the sauce; pour it over the potato and sausage layers.
  7. Cover with foil and bake for 50-60 minutes; remove foil, sprinkle with remaining cheese, and bake uncovered for another 25-30 minutes until golden brown.
  8. Let rest for 10 minutes before serving.
