  • 1 lb. boneless skinless chicken breast or thighs
  • 8 oz. dried vermicelli noodles
  • 1 medium cucumber
  • 2 medium carrots
  • Fresh cilantro
  • 1/2 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 tablespoon fish sauce
  • 1/2 tablespoon sesame oil
  • 1/2 tablespoon brown sugar or honey
  • 12 cloves garlic
  • 1 stalk lemongrass, cut into 3-inch pieces
  • 1/2 small onion
  • 2 tablespoons rice vinegar
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground black pepper or white pepper
  • 1/2 teaspoon red chili, finely chopped (or to taste)
  • 1 tablespoon roasted peanuts
  • 1 lime, wedged (for serving)

Instructions

  1. Marinate chicken: Combine vegetable oil, soy sauce, fish sauce, sesame oil, brown sugar or honey, minced garlic, lemongrass pieces, and sliced onion in a bowl. Add chicken cubes and marinate for at least 30 minutes.
  2. Cook noodles: Boil water in a pot and cook vermicelli noodles according to package instructions until tender but firm. Drain and rinse under cold water.
  3. Stir-fry chicken: In a large skillet or wok over medium-high heat, stir-fry marinated chicken for about 6-8 minutes until cooked through.
  4. Assemble bowls: Place noodles as the base in serving bowls; top with stir-fried chicken mixture and julienned cucumber and carrots. Sprinkle with coarsely chopped cilantro.
  5. Prepare sauce: Mix fish sauce (or substitute), rice vinegar, water, sesame oil, granulated sugar, pepper, and red chili in a small bowl until sugar dissolves.
  6. Serve: Drizzle sauce over each bowl and finish with roasted peanuts and lime wedges.
