  • 3 cups + 1 heaping Tablespoon gluten-free baking flour blend WITH binder (divided)
  • 1 cup granulated sugar (divided)
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cold butter or vegan butter (2 sticks, cubed)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 pint blueberries
  • 6 oz raspberries
  • 6 oz blackberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13” baking pan.
  2. In a medium bowl, combine mixed berries with ½ cup granulated sugar and 1 tablespoon gluten-free flour; set aside.
  3. In a large bowl, mix together remaining flour (3 cups), ½ cup granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  4. Whisk together egg and vanilla; drizzle over dry ingredients. Add cubed butter and mix until crumbly.
  5. Press half of the crumb mixture into the prepared pan for the crust. Spread berry mixture evenly over it.
  6. Sprinkle remaining crumb mixture on top and bake for 38–40 minutes until golden brown.
  7. Let cool completely before cutting into squares.
