  • 12 oz (340g) ground beef (80/20)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 12 tablespoons ketchup
  • 1 tablespoon mustard
  • Brioche buns
  • 2 slices cheddar cheese
  • Pickles
  • Lettuce
  • Thinly sliced onion
  • Tomato slices

Instructions

  1. Divide the ground beef into three 3 oz (85g) portions and roll them into balls.
  2. Place each ball between two pieces of parchment paper and flatten them using a meat mallet.
  3. In a bowl, mix together mayonnaise, sour cream, ketchup, mustard, and black pepper for the sauce.
  4. Heat a cast iron skillet over medium-high heat. Season one side of each patty with salt and pepper before placing it in the skillet.
  5. Cook for 1-2 minutes until browned; flip and cook for another 30 seconds to a minute, adding cheese on top of one patty before stacking another on top.
  6. Toast brioche buns on the grill until golden brown. Assemble your burgers with sauce, lettuce, tomato, onion, double patties, pickles, and more sauce.
