  • 1 pound shrimp (raw, tail and vein removed)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons lemon juice
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 4 scallions (thinly sliced)
  • 1 teaspoon sesame seeds

Instructions

  1. Prepare the cornstarch slurry by whisking together water and cornstarch until smooth. Set aside.
  2. In a small saucepan, combine soy sauce, brown sugar, lemon juice, garlic, ginger, and toasted sesame oil. Whisk in the cornstarch slurry.
  3. Heat the mixture over medium-high heat until boiling; reduce heat to maintain a gentle boil for about 2 minutes until thickened.
  4. Reserve some sauce for basting later and coat the shrimp in the remaining sauce.
  5. Thread shrimp onto skewers and grill over high heat for about 5–10 minutes until fully cooked.
  6. Brush with reserved sauce and garnish with sliced scallions and sesame seeds before serving.
