  • 3 cans peaches in lite syrup (29 ounces each)
  • ½ cup salted butter
  • 1 cup granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • 2 ½ cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 cup very cold unsalted butter, cut in cubes (2 sticks)
  • ½ cup very cold water
  • Ground cinnamon for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, drain canned peaches and reserve some syrup. Melt half the butter in a saucepan; add peaches, sugar, cinnamon, nutmeg, vanilla extract, and flour. Stir well and heat for about 5 minutes.
  3. For the crust, mix flour, sugar, and salt in another bowl. Cut in cubed cold butter until crumbly. Gradually add cold water until combined.
  4. Roll out half the crust and fit it into a greased baking dish. Pour peach filling on top and cover with remaining rolled-out crust; cut slits for ventilation.
  5. Brush top with beaten egg and sprinkle with cinnamon sugar if desired. Bake for about 45 minutes until golden brown.
