  • 1/2 tbsp onion powder
  • 1 tsp dry mustard powder
  • 1/2 tsp cayenne pepper
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 2 tbsp BBQ sauce

Instructions

  1. Preheat smoker to maintain a temperature between 225-250 degrees F.
  2. In a mixing bowl, combine all spice rub ingredients.
  3. Generously rub the spice mixture over each chicken thigh, ensuring some goes under the skin.
  4. Place seasoned thighs skin side up in the smoker.
  5. Mix mop sauce ingredients in a bowl.
  6. After smoking for about 45 minutes, baste with mop sauce every 30 minutes until the internal temperature reaches 165 degrees F.
  7. Once cooked, let the thighs rest for 15 minutes before serving.
