  • 2 to 2.25 pounds beef tenderloin
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 2 teaspoons granulated garlic
  • 2 teaspoons onion powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ to ½ teaspoon cayenne pepper (to taste)
  • ½ cup BBQ sauce

Instructions

  1. Preheat your pellet grill or smoker to 225°F.
  2. In a mixing bowl, combine all dry rub ingredients: smoked paprika, brown sugar, garlic powder, onion powder, cumin, kosher salt, black pepper, and cayenne pepper.
  3. Trim any excess silver skin from the beef tenderloin and coat it generously with the spice mixture.
  4. Place the seasoned tenderloins on the grill grates and smoke until they reach an internal temperature of 135°F (about 1½ hours).
  5. Baste with BBQ sauce on all sides and continue cooking until the thickest part reaches at least 145°F (about another 20-30 minutes).
  6. Remove from the grill and let rest for about five minutes before slicing into medallions.
