  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1 & 1/2 teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon black pepper
  • 3 pound boneless beef shoulder roast
  • 1 small sweet onion, sliced thin
  • 6 cloves garlic, peeled and smashed
  • 1 dried bay leaf

Instructions

  1. In a bowl, whisk together olive oil, orange juice, lime juice, salt, cumin, oregano, crushed red pepper flakes, and black pepper.
  2. Make slits in the beef roast and rub generously with the marinade.
  3. Place the marinated beef in a slow cooker with sliced onions and smashed garlic.
  4. Pour any remaining marinade over the beef and cook on low for about 8 hours until tender.
  5. Shred the beef with tongs or forks once cooked.
