  • 1 (5 to 6 pound) flat cut corned beef (with pickling spices)
  • 4 to 6 small potatoes
  • 1 large onion (quartered)
  • 1 1/2 cups baby carrots
  • 2 ribs of celery (cut into 3-inch pieces)
  • 3 cloves garlic
  • 1 medium head cabbage (cut into 1-inch wedges)
  • 2 to 4 cups beef broth

Instructions

  1. Prepare the Vegetables: Layer potatoes, onions, carrots, celery, and garlic at the bottom of a slow cooker.
  2. Add the Beef: Place the corned beef on top of vegetables, fat side up. Pour any juices from the package over it and sprinkle with pickling spices.
  3. Add Broth: Pour enough beef broth to cover the meat halfway. Cover and cook on low for about nine hours.
  4. Add Cabbage: One hour before serving, add cabbage wedges around the brisket in the broth.
  5. Serve: Once cooked, remove brisket, trim fat if desired, slice against the grain, and serve with cabbage and vegetables.
