  • 1 1/22 lbs. top sirloin steak
  • 1 lb. baby red potatoes
  • 2 bell peppers (red, yellow, or orange)
  • 2 small or 1 large zucchini
  • 1 large red onion
  • extra virgin olive oil
  • 1/3 cup reduced sodium soy sauce
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon ground coriander
  • 1/21 teaspoon red pepper flakes

Instructions

  1. Prepare the marinade by whisking all marinade ingredients together in a bowl. Reserve 1/3 cup for basting.
  2. Marinate the steak in the remaining mixture for 2-6 hours in the refrigerator.
  3. Pre-cook baby potatoes by microwaving them with water until fork-tender.
  4. Combine cooked potatoes with chopped vegetables and reserved marinade; refrigerate.
  5. Soak wooden skewers in water for at least 30 minutes.
  6. Assemble kabobs by threading marinated steak and vegetables onto skewers.
  7. Grill over medium-high heat until cooked through.
