4 large chicken breasts, cut into bite-sized chunks
1 cup teriyaki sauce
1/4 cup pineapple juice
1 pineapple, cut into chunks
2 bell peppers (any color), cut into chunks
1 bunch scallions, cut into 1-inch pieces
1 teaspoon kosher salt
1/2 teaspoon cracked black pepper
Sesame seeds, for garnish
Chopped fresh parsley or cilantro, for garnish
Instructions
Marinate the Chicken: In a bowl, mix chicken chunks with salt, pepper, teriyaki sauce, and pineapple juice. Cover and refrigerate for at least 20 minutes.
Prepare Skewers: Soak wooden skewers in water for 20-30 minutes if using.
