  • 3 large russet potatoes (baked and cooled overnight)
  • 3 tablespoons salted butter
  • ¼ cup diced shallot
  • 1 clove garlic (minced)
  • 2 teaspoons salt
  • ½ teaspoon ground black pepper
  • 1 ½ cups sour cream
  • 2 ½ cups freshly shredded sharp white cheddar cheese (divided)
  • ½ cup grated parmesan

Instructions

  1. Preheat your oven to 375°F and grease a 2 qt baking dish.
  2. In a medium pan, melt the butter over medium-low heat. Sauté the shallots until soft, then add the garlic and cook briefly before removing from heat.
  3. Grate the cooled baked potatoes with their skins.
  4. In a large mixing bowl, combine sour cream, salt, pepper, 2 cups of cheddar cheese, and the sautéed shallots and garlic. Gently fold in the grated potatoes.
  5. Transfer the mixture into the baking dish, top with remaining cheddar cheese and grated parmesan. Bake for 25-30 minutes until golden brown.
