  • 30 to 32 oz frozen shredded hash browns
  • 10.5 oz can unsalted cream of chicken soup
  • 2 cups shredded pepper jack cheese
  • 1½ cups heavy whipping cream
  • ½ cup melted butter
  • ½ cup sour cream
  • 1 cup grated Parmesan cheese (divided)
  • Crushed crackers for topping
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400ºF and lightly spray a 9×13-inch baking dish with cooking spray.
  2. In a large bowl, combine frozen hash browns, cream of chicken soup, pepper jack cheese, heavy whipping cream, melted butter, sour cream, ¼ cup Parmesan cheese, onion powder, garlic powder, salt, and pepper. Mix well.
  3. Transfer the potato mixture into the prepared baking dish.
  4. In another bowl, mix crushed crackers with the remaining Parmesan cheese and paprika; sprinkle over the potato mixture.
  5. Bake uncovered for about 45 to 50 minutes until bubbly and golden brown.
