  • 3 medium peaches, diced
  • 8 oz fresh mozzarella, cubed
  • 2 cups cherry tomatoes, halved
  • 1 cup arugula
  • 1/2 cup fresh basil leaves, minced
  • 1/3 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or agave nectar
  • 1 teaspoon dried oregano
  • 1/3 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, whisk together balsamic vinegar, Dijon mustard, honey, and oregano. Gradually add olive oil while whisking until emulsified. Season with salt and pepper.
  2. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  3. In the bowl with the dressing, add the cooled pasta followed by mozzarella, peaches, cherry tomatoes, arugula, and basil. Gently toss until coated.
