  • lbs boneless skinless chicken breasts
  • ⅔ cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons vegetable oil
  • 4 cups sliced cabbage
  • 1½ cups sliced shiitake mushrooms
  • 2 large eggs
  • Green onions for garnish

Instructions

  1. In a bowl, whisk together hoisin sauce, soy sauce, rice vinegar, garlic, ginger, cornstarch, sesame oil, black pepper, and mirin. Reserve half for later.
  2. Marinate chicken in the remaining sauce for 10-15 minutes.
  3. Heat oil in a skillet over medium-high heat. Cook chicken until browned and cooked through; remove from skillet.
  4. Sauté mushrooms until browned; set aside with chicken.
  5. Cook beaten eggs until set; cut into strips.
  6. Stir-fry cabbage until slightly wilted; return chicken, mushrooms, and egg strips to the skillet.
  7. Add reserved sauce and heat until thickened; serve garnished with green onions.
