  • 2 cups milk chocolate chips
  • 1 ¼ cups heavy cream
  • 3 eggs
  • ¾ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (for filling)
  • ½¾ teaspoons peppermint extract
  • 6 drops green food coloring
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • Powdered sugar (to aid in rolling)
  • ¼ teaspoon peppermint extract
  • ¼ cup mini chocolate chips or Andes Creme de Menthe Baking Chips for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, beat eggs and sugar until light and fluffy. Mix in brewed coffee (or water) and vanilla.
  3. In another bowl, combine cocoa powder, flour, salt, and baking powder; then add to the egg mixture until combined.
  4. Spread batter evenly on prepared baking sheet and bake for about 12–15 minutes until a toothpick comes out clean.
  5. Cool slightly before rolling in a powdered sugar-dusted towel; let cool completely.
  6. Whip heavy cream with powdered sugar and peppermint extract until stiff peaks form; fold in green food coloring and mini chocolate chips.
  7. Unroll cooled cake, spread filling evenly, roll back up without towel, then place seam side down on a platter.
  8. Heat remaining heavy cream and pour over chocolate chips to create ganache; drizzle over the cake roll.
