  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry pie filling or cherry compote
  • 1/4 cup chocolate ganache (melted chocolate + cream)
  • Fresh cherries for garnish
  • Dark chocolate squares or shavings

Instructions

  1. Preheat the oven to 325°F (163°C). Line a muffin tin with parchment sleeves or use mini cheesecake molds.
  2. In a bowl, combine chocolate cookie crumbs and melted butter until well mixed. Press the mixture firmly into the base of each mold to form the crust.
  3. In another large bowl, beat the cream cheese and sugar together until smooth. Add eggs one at a time, mixing just until incorporated, then stir in sour cream and vanilla.
  4. Pour the cheesecake batter over the crusts in each mold, filling almost to the top. Swirl in cherry pie filling using a toothpick for a marbled effect.
  5. Bake for 18–20 minutes, until centers are set but slightly jiggle when shaken. Let cool before refrigerating for at least 4 hours or overnight.
  6. Before serving, drizzle melted chocolate ganache on top and garnish with fresh cherries and dark chocolate.
