  • 2 ripe mangoes
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1/2 cup chicken broth
  • Juice and zest of 1 lime
  • 2 tbsp cilantro
  • 1 tsp red pepper flakes
  • Salt and fresh cracked black pepper
  • 22 1/2 lb whole chicken

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the mango sauce by peeling and chopping the mangoes. Dice the onion and mince the garlic. Combine all sauce ingredients in a bowl and mix well.
  3. Rinse the chicken under cold water, pat dry, and season generously inside and out with salt and cracked pepper.
  4. Place the seasoned chicken in a roasting pan and pour the mango sauce evenly over it.
  5. Bake for about 45 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally for moisture.
  6. Allow the chicken to rest for a few minutes before carving and enjoy warm with your favorite sides.
