  • 1 lb ground beef
  • 1/4 cup green onions (sliced)
  • 1/4 cup shredded carrots
  • 1 tablespoon fresh ginger (grated)
  • 4 cloves garlic (minced)
  • 1/4 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Swerve or Lakanto (sweetener)
  • 2 tablespoons mild tasting oil
  • 1 cup cabbage (shredded)
  • 1 tablespoon sesame oil
  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar
  • 1 tablespoon Swerve or Lakanto
  • 1 teaspoon sesame oil
  • Pinch red pepper flakes

Instructions

  1. Prepare the Cabbage: Remove the core from the Napa cabbage and peel off individual leaves. Rinse under cold water.
  2. Cook the Filling: In a non-stick skillet over medium heat, add oil. Brown the ground beef, then stir in green onions, carrots, ginger, garlic, chicken broth, soy sauce, and sweetener until veggies are tender.
  3. Roll the Egg Rolls: Place about two tablespoons of filling on one cabbage leaf. Fold in sides and roll tightly from the bottom up.
  4. Cook: In the same skillet, heat more oil if needed. Add egg rolls seam-side down and cook until golden brown on each side (about 2-3 minutes).
  5. Serve: Enjoy warm with your favorite dipping sauce.
