  • 1 small raw chicken breast
  • 1 bay leaf
  • 1 small grated carrot
  • 1 diced onion
  • 1 tbsp olive oil
  • 3 tbsp heavy cream
  • 2 tbsp cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp melted butter
  • 2 large eggs
  • 7 tbsp almond flour
  • 1 tsp xanthan gum
  • Salt and pepper to taste

Instructions

  1. In a medium stock pot, place the chicken breast and bay leaf, cover with water, and bring to a boil. Cook for about 20 minutes, skimming any foam.
  2. Meanwhile, heat olive oil in a small skillet and sauté the grated carrot and diced onion for about 3-5 minutes until softened.
  3. Transfer the sautéed vegetables into the pot with the chicken broth.
  4. For the dumpling mixture, combine almond flour, xanthan gum, and salt in one bowl; melt mozzarella and cream cheese in another bowl then mix well. Add eggs and incorporate thoroughly.
  5. Form small dumplings with wet hands and drop them into the soup to cook for about 3-5 minutes.
  6. Stir in heavy cream along with salt and pepper to taste before serving hot.
