  • 3 russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 pound deli corned beef (thinly sliced)
  • 1 cup chopped cabbage
  • ½ cup Thousand Island dressing
  • ½ sliced sweet onion
  • Oil (for frying)
  • Fresh chives (for garnish)

Instructions

  1. Peel and cube potatoes; boil in salted water for 10 minutes until tender.
  2. Replace boiling water with chopped cabbage and onion; cook for 5 minutes until softened. Drain.
  3. Mash the boiled potatoes, then mix in cheddar cheese, salt, and pepper.
  4. Heat a skillet over medium heat with oil.
  5. Assemble tacos by spreading dressing on each tortilla and adding mashed potatoes, corned beef, cabbage, and onion. Fold in half.
  6. Fry each taco for about 30 seconds per side until golden brown.
  7. Garnish with fresh chives before serving.
