  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 34 pound boneless beef shoulder
  • 2 tablespoons olive oil
  • 1 cup reduced sodium chicken broth
  • 1 cup barbecue sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 8 burger buns

Instructions

  1. In a small bowl, combine spice rub ingredients.
  2. Cut the beef into 4 pieces and season all sides with the spice rub.
  3. Heat olive oil in the Instant Pot on sauté mode and brown the beef on all sides.
  4. Deglaze the pot with half of the chicken broth and scrape up browned bits.
  5. Add remaining broth, barbecue sauce, vinegar, and honey; stir to combine.
  6. Return beef to the pot and pressure cook on high for 60 minutes.
  7. Allow natural pressure release for 20 minutes before quick release.
  8. Shred beef with forks and thicken sauce with cornstarch mixed with water; stir in shredded beef.
  9. Serve on burger buns or your choice of base.
