  • 1 cup (225 g or 2 sticks) unsalted butter, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 3 cups (420 g) all-purpose flour
  • 1/2 teaspoon liquid red food coloring
  • 1/2 teaspoon raspberry extract

Instructions

  1. In a stand mixer, combine sugar, butter, vanilla extract, baking powder, and salt; mix until creamy.
  2. Add the egg and mix until incorporated. Gradually add flour on low speed until combined.
  3. Divide dough into two halves; color one half with liquid red food coloring and raspberry extract. Wrap each half in plastic wrap and chill for 30 minutes.
  4. Roll out both doughs into rectangles between parchment paper; stack them together and roll tightly into logs.
  5. Chill logs for at least two hours before slicing into rounds.
  6. Bake until edges are lightly browned; cool completely on wire racks.
