  • 4 tablespoons olive oil (divided)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 3 cloves garlic (minced)
  • 1 shallot (diced)
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 pounds boneless, skinless chicken thighs (cut into 1-inch chunks)

Instructions

  1. In a medium bowl, mix 2 tablespoons olive oil, lemon juice, lemon zest, paprika, oregano, basil, thyme, minced garlic, diced shallot, 1 1/4 teaspoons salt, and 1 1/4 teaspoons pepper.
  2. Add the chicken chunks to the marinade and stir until well coated. Marinate for at least 2 hours or overnight in the refrigerator.
  3. Preheat your grill to medium heat.
  4. Thread marinated chicken pieces onto skewers. Brush with the remaining olive oil and season with additional salt and pepper.
  5. Grill skewers for about 10 minutes, turning occasionally until cooked through (165°F internal temperature).
