  • 1.5 pounds sirloin steak (or ribeye, strip steak)
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 4 tablespoons butter (divided)
  • 45 cloves garlic (minced)
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Let the steak sit at room temperature for 30 minutes before cooking.
  2. Cut the steak into 1″ cubes and season generously with salt and pepper.
  3. Heat the olive oil and 1 tablespoon of butter in a cast iron skillet over medium-high heat. Sear the steak cubes in batches for about 2 minutes on each side until cooked to medium doneness.
  4. Remove the steak from the skillet and keep warm. Lower the heat to medium-low, add remaining butter and minced garlic. Stir continuously for 1-2 minutes until fragrant.
  5. Return the steak to the pan, tossing it with the garlic butter sauce. Serve immediately topped with chopped parsley.
