  • 1/2 cup rolled oats
  • 1 cup milk
  • 2 tablespoons lemon juice
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 7 oz fresh or frozen cherries

Instructions

  1. Preheat oven to 400°F (200°C) and line a muffin pan with cases.
  2. Chop cherries into chunky pieces.
  3. In a bowl, mix milk and lemon juice; add oats and allow to soak.
  4. Combine soaked oats with vegetable oil, eggs, and vanilla; beat until well mixed.
  5. In another bowl, whisk together flour, sugar, salt, baking powder, and oats.
  6. Pour wet mixture into dry ingredients; stir gently until just combined.
  7. Fill muffin liners three-quarters full and top with extra cherries.
  8. Bake for 15–18 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for five minutes before transferring to a cooling rack.
