Eggnog Latte Cookies are a festive delight, perfect for celebrating the holiday season. These cookies combine the rich flavors of creamy eggnog with the bold taste of espresso, resulting in a soft and chewy treat that will warm your heart.   • 2 & 1/3 cups all-purpose flour
  • 1 tsp Diamond Crystal kosher salt (use 1/2 tsp if using Morton’s)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp each of ground cinnamon, espresso grounds
  • 2 tsp baking powder
  • 16 tbsp salted butter
  • 1/2 cup brown sugar (lightly packed)
  • 1/2 cup granulated sugar
  • 1/3 cup eggnog
  • 1 & 1/2 cups white chocolate chips
  • 1/2 tsp nutmeg
  • 1 tsp espresso grounds
  • 2 tsp smoked flaky salt

Instructions

  1. Prepare the white chocolate mixture by melting white chocolate chips with nutmeg and espresso powder over simmering water or in the microwave.
  2. Refrigerate the melted mixture on parchment paper while preparing cookie dough.
  3. In a bowl, mix dry ingredients: flour, salt, nutmeg, cinnamon, espresso grounds, and baking powder.
  4. Cream together butter and sugars until fluffy. Gradually add eggnog until smooth.
  5. Combine dry ingredients into wet mixture until just incorporated.
  6. Chop chilled white chocolate and fold into the dough evenly.
  7. Shape dough into a log on parchment paper, wrap tightly, and freeze for at least 2 hours.
  8. Preheat oven to 375°F (190°C), slice chilled dough into cookies, place on a baking sheet lined with parchment paper, and bake for 10–12 minutes.
  9. Sprinkle with smoked flaky salt while warm.
