  • 3 lbs. red potatoes
  • 3/4 cup mayonnaise
  • 1/3 cup buttermilk (or yogurt thinned with water)
  • 1/4 cup fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 ribs celery (diced)
  • 1/2 cup red onion (diced)
  • Kosher salt and black pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender (about 30 minutes). Drain and let cool.
  2. In a mixing bowl, whisk together mayonnaise, buttermilk, chopped dill, Dijon mustard, whole grain mustard, salt, and pepper.
  3. Once cooled, cut the potatoes into 1-inch pieces and combine them with diced celery and red onion in a large bowl.
  4. Add half of the dressing to the potato mixture and gently toss to coat. Chill for at least an hour or overnight.
  5. Before serving, mix in the remaining dressing and garnish with chopped green onions if desired.
