  • 3 & 1/2 pounds boneless beef shoulder
  • 3/4 cup extra-virgin olive oil
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 8 garlic cloves (minced)
  • 1 tablespoon minced oregano
  • 2 teaspoons ground cumin
  • Kosher salt and pepper

Instructions

  1. Prepare the Marinade: In a food processor or large ziplock bag, combine olive oil, orange zest, orange juice, lime juice, chopped cilantro, chopped mint, minced garlic, oregano, and cumin. Pulse or shake well to mix.
  2. Marinate the Beef: Add the beef to the marinade mixture in a sealed bag. Refrigerate overnight or for several hours.
  3. Preheat & Roast: Preheat oven to 425°F. Place a wire rack on a rimmed baking sheet. Remove beef from marinade (discard marinade) and season generously with salt and pepper. Roast for about 30 minutes until lightly browned.
  4. Finish Roasting: Lower the oven temperature to 375°F and continue roasting for an additional hour and 20–30 minutes until a meat thermometer reads 160°F.
  5. Rest & Serve: Let the beef rest for at least 20 minutes before carving against the grain.
