  • 1 pound dried wagon wheel pasta
  • 1 pound turkey bacon, diced
  • 3/4 pound lean ground beef (or ground turkey)
  • 1 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 2 tablespoons spicy brown mustard
  • 2 & 1/2 teaspoons hot chili sauce
  • 15-ounce can whole kernel sweet corn, drained
  • 2 cups cherry tomatoes, halved
  • 5 scallions, diced

Instructions

  1. Cook the pasta in a large pot of boiling water until al dente. Drain and rinse under cold water; drizzle with olive oil to prevent sticking.
  2. In a nonstick skillet, sauté the diced turkey bacon over medium heat until crispy. Transfer to paper towels to drain.
  3. In the same skillet, cook the ground beef until browned. Season with cumin, red pepper flakes, salt, and pepper; drain fat and let cool.
  4. In a large mixing bowl, whisk together mayonnaise, barbecue sauce, spicy brown mustard, and hot chili sauce until smooth.
  5. Combine cooked pasta, turkey bacon, ground beef, corn, tomatoes, and scallions in the bowl with the dressing; toss well to coat evenly.
  6. Serve immediately or refrigerate for at least an hour to allow flavors to meld.
