Ingredients

Scale
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark vanilla extract (alcohol-free)
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 cup chopped toasted pecans
  • 8 oz cream cheese
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract for frosting
  • 1 cup granulated sugar for topping
  • 6 tablespoons unsalted butter for topping
  • ½ cup whipping cream for topping
  • 1 teaspoon sea salt for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream the softened butter and granulated sugar until fluffy. Add eggs one at a time and mix well before incorporating both vanilla extracts.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture while alternating with whole milk until combined.
  4. Fold in the toasted pecans gently. Divide the batter between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. Let cakes cool in pans for 10 minutes before transferring to a cooling rack.
  6. While cooling, prepare the frosting by beating together softened butter and cream cheese until smooth. Gradually add powdered sugar and mix in vanilla extract.
  7. Once cooled, layer the cakes on a serving plate with frosting between layers and around the sides.
