  • 1 1/2 cups packed light brown sugar
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 1/4 cups milk
  • 1 1/4 cups unsalted butter, room temperature
  • 9 cups powdered sugar
  • 8 oz mascarpone cheese, cool but not cold
  • 3/4 tsp salt
  • 6 tbsp peach filling (from above)
  • 6 tbsp all-purpose flour (optional for crumble)
  • 3 tbsp packed light brown sugar (optional for crumble)
  • 2 tbsp unsalted butter, cold, sliced (optional for crumble)

Instructions

  1. For the peach filling, combine chopped peaches, brown sugar, cornstarch, and lemon juice in a saucepan. Cook until thickened, then cool.
  2. Preheat oven to 350°F (176°C). Prepare two greased 8-inch cake pans.
  3. Mix flour, baking powder, salt, and cinnamon in one bowl. In another bowl, cream butter and brown sugar until fluffy; add eggs and vanilla.
  4. Combine wet and dry ingredients alternately with milk until smooth.
  5. Divide batter between pans and bake for 30-35 minutes. Cool on racks.
  6. Prepare frosting by beating butter and powdered sugar; mix in mascarpone cheese.
