  • 1 lb chicken, cooked until crispy and chopped
  • 2 heads romaine lettuce, chopped
  • 3 cups rotini pasta, cooked and cooled
  • 1 to 2 cups diced tomatoes
  • 1.5 cups mayonnaise
  • 2 teaspoons tomato powder (optional)
  • 2 teaspoons celery salt (or to taste)
  • 1 tablespoon dill (or to taste)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F. Spread the chicken on a cookie sheet and bake for about 15 minutes until crispy. Drain on paper towels and chop.
  2. Wash and chop the romaine into bite-sized pieces and dice the tomatoes.
  3. Boil water in a pot and cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  4. In a large mixing bowl, combine mayonnaise with optional tomato powder, celery salt, dill, and black pepper.
  5. Add cooked chicken, romaine lettuce, diced tomatoes, and cooled pasta to the bowl. Toss gently to coat.
  6. Refrigerate for at least an hour before serving.
