  • 2 tbsp olive oil
  • 1 small onion, sliced
  • 3 garlic cloves, minced
  • ½ tbsp lemon juice
  • 2 ounces blackened seasoning mix
  • Bunch of lettuce leaves
  • 1 ½ cups red kidney beans, rinsed and drained
  • Cucumber, sliced
  • Corn
  • Cherry tomatoes, halved
  • Lime wedges
  • Guacamole

Instructions

  1. Pat the shrimp dry with a kitchen towel.
  2. In a mixing bowl, combine shrimp with olive oil, onion, garlic, lemon juice, and blackened seasoning mix.
  3. Heat a cast iron skillet over medium-high heat until hot. Add the shrimp mixture and cook for about 3 minutes on each side until nicely browned.
