1 can beef broth (half-full, room temperature)
5-pound whole chicken (neck and giblets removed)
2 tablespoons vegetable oil
1 teaspoon cumin
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons kosher salt
1 teaspoon paprika
1 teaspoon oregano
1 teaspoon cayenne pepper
½ teaspoon ground black pepper
Instructions
Preheat your grill to medium-high heat.
Pat the chicken dry with paper towels. In a small bowl, mix vegetable oil with cumin, garlic powder, onion powder, salt, paprika, oregano, cayenne pepper, and black pepper.
Coat the entire chicken—inside and out—with the seasoning mixture.
Place an opened can of half-full beef broth in a disposable pan and set the seasoned chicken upright on the can.
Turn off one burner of the grill for indirect cooking. Place the chicken over the turned-off burner.
Cover the grill lid and cook for about 1 hour and 15 minutes until the internal temperature reaches 165°F.
Increase grill heat to high for an additional crisping finish before letting it rest for about 10 minutes before serving.
