  • 2 tablespoons yellow onion (finely diced)
  • 1 tablespoon red pepper (finely diced)
  • 1 tablespoon butter (salted)
  • 1 cup half and half
  • 1 lb. American cheese (high quality)
  • ¼ cup Pico De Gallo
  • ¼ cup cilantro (roughly chopped)

Instructions

  1. Prepare a double boiler by placing a heatproof bowl over simmering water to ensure even melting.
  2. In a sauté pan over medium heat, melt the butter and sauté the diced jalapeno, onion, and red pepper until softened (about 5 minutes). Set aside.
  3. In the double boiler or a skillet, pour in the half and half. Gradually add the American cheese in smaller squares while stirring continuously until melted and smooth.
  4. Stir in the sautéed vegetables from step 2. Remove from heat and garnish with Pico De Gallo and cilantro before serving.
