  • 4 Medium Flour Tortillas
  • 1 Large Sweet Potato
  • 2 Avocados
  • 1/2 Cup Black Beans (Rinsed and Drained)
  • 1/4 Cup Corn (Rinsed and Drained)
  • 1 Mini Red Pepper
  • 1 Mini Orange Pepper
  • 1 Tbsp Homemade Taco Seasoning
  • 1 Cup Cheddar or Pepper Jack Cheese

Instructions

  1. Peel and cube the sweet potato, then boil until tender (about 10 minutes). Drain well.
  2. In a mixing bowl, combine boiled sweet potatoes, black beans, corn, diced peppers, taco seasoning, and cheese. Gently mash together until blended.
  3. Heat a non-stick skillet over medium heat; add butter. Place one tortilla in the skillet and spoon some filling onto half of it. Fold the other half over.
  4. Cook for about 3-4 minutes until golden brown on one side. Flip carefully using a spatula and cook an additional 3-4 minutes until both sides are golden and the cheese is melted.
  5. Remove from skillet, let cool slightly, then slice into wedges. Serve with fresh cilantro, lime juice, salsa, and sour cream if desired.
