  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon (for streusel topping)
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine egg, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; fold in chopped apples.
  5. For the streusel topping, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  6. Fill muffin cups with batter and top with streusel.
  7. Bake for 18–22 minutes or until a skewer comes out clean.
