  • 2 lbs shredded cooked chicken breast
  • 15 oz. can cannellini beans
  • 15 oz. can pinto beans
  • 14 oz. can petite diced tomatoes
  • 2 cups low sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 medium stalks celery, diced (about 2 cups)
  • 1/4 cup unsalted butter
  • 2 Tbsp dill pickle brine
  • 1 tsp garlic powder
  • 2 Tbsp cayenne pepper
  • 2 Tbsp brown sugar or Swerve brown
  • 1 tsp chili powder
  • 2 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp salt or to taste
  • 2 Tbsp honey or Pyure sugar-free honey
  • sliced dill pickles (for garnish)
  • nonfat plain Greek yogurt (for garnish)

Instructions

  1. Gather and prepare all ingredients by dicing the onion and celery.
  2. In a large pot over medium heat, melt the unsalted butter and sauté the onion and celery until softened (about 5 minutes).
  3. Stir in garlic powder, cayenne pepper, brown sugar, chili powder, smoked paprika, ground coriander, ground cumin, and salt.
  4. Add the shredded chicken breast, cannellini beans, pinto beans, petite diced tomatoes, chicken broth, and dill pickle brine to the pot. Stir well to combine all ingredients and bring to a simmer.
  5. Reduce heat to low and let it cook uncovered for about 30 minutes or until heated through, stirring occasionally to prevent sticking.
  6. Taste and adjust seasoning if necessary. Serve hot with sliced dill pickles and a dollop of nonfat plain Greek yogurt on top if desired.
