  • 4 to 4 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons table salt
  • 3/4 cup water
  • 2/3 cup whole milk
  • 4 tablespoons salted butter (diced)
  • 1 1/2 teaspoons freshly squeezed lemon juice
  • Olive oil for brushing during rise
  • 23 tablespoons melted butter for brushing after baking

Instructions

  1. Preheat your oven to 180°F. In a stand mixer bowl fitted with a whisk attachment, mix together the flour, sugar, yeast, and salt.
  2. In a microwavable bowl, heat the water, milk, and diced butter until it reaches 115°F. Stir well.
  3. Pour the warm mixture into the dry ingredients along with the lemon juice. Switch to the dough hook attachment and mix on low speed until smooth (3-4 minutes). Add more flour if necessary until the dough is elastic.
  4. Cover the bowl with plastic wrap and let it rest for 5 minutes. Meanwhile, grease a 13×9 baking dish.
  5. Cut the dough into 16 equal pieces and shape them into balls. Place them in the prepared dish with smooth sides facing up.
  6. Brush with olive oil and cover again with plastic wrap. Let them rise in a turned-off oven for about 25 minutes.
  7. Once risen, preheat your oven to 375°F. Bake rolls for about 14-16 minutes until golden brown on top. Brush with melted butter before serving.
