  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1 teaspoon sriracha
  • ¾ teaspoon garlic powder
  • ½ teaspoon toasted sesame oil
  • ½ teaspoon ground ginger
  • 4 cups shredded chicken
  • 4 cups green cabbage (shredded)
  • 1 red bell pepper (diced)
  • 1 cup carrots (julienned)
  • 1 (11 oz.) can mandarin oranges (drained)
  • ½ cup honey roasted peanuts
  • 1/3 cup slivered almonds

Instructions

  1. Prepare the dressing by blending together peanut butter, soy sauce, chicken broth, lime juice, honey, sriracha, garlic powder, sesame oil, and ground ginger until smooth. Chill.
  2. In a large mixing bowl, combine shredded chicken, green cabbage, red bell pepper, carrots, mandarin oranges, and honey roasted peanuts. Toss gently to mix.
  3. Drizzle the chilled dressing over the salad just before serving and toss to coat evenly.
