  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1 pound ground beef (85/15)
  • 2 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili flakes or 1 minced Thai chili
  • 1 cup fresh Thai basil leaves, chopped
  • 8 to 10 rice paper wrappers
  • 1/2 cup fresh mint leaves
  • 1/2 cup cilantro leaves
  • 1/4 cup sliced green onion
  • 1/4 cup julienned carrots or cucumbers
  • 1/4 cup dipping sauce (soy-lime or chili-garlic blend)

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Sauté minced garlic and finely chopped shallot until fragrant.
  2. Add ground beef and cook until browned, breaking it apart for an even texture.
  3. Stir in soy sauce, brown sugar, and chili flakes. Simmer for 2–3 minutes to meld flavors.
  4. Remove from heat; add lime juice and chopped Thai basil. Let cool slightly.
  5. Prepare a shallow plate with warm water. Dip one rice paper wrapper in the water until pliable.
  6. Place the wrapper on a clean surface, add the beef filling along with any additional herbs or veggies.
  7. Fold the bottom over the filling, tuck in the sides tightly, and roll up completely.
  8. Repeat until all wrappers are filled.
  9. Serve sliced in half with your choice of dipping sauce.
