  • 1/2 cup (120 ml) vegetable oil
  • 1/2 cup (100 grams) granulated sugar (plus extra for sprinkling)
  • 1/2 cup (60 g) powdered sugar
  • 1 large egg (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 teabag chai tea (cut the bag open and remove the crushed up leaves)
  • 1 1/2 cups (180 g) powdered sugar (sifted)
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • 23 tablespoons eggnog (or whole milk)

Instructions

  1. Cream unsalted butter in a stand mixer until smooth, then mix in vegetable oil and both sugars.
  2. Add egg and vanilla extract; mix until combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and chai tea leaves. Gradually add to wet ingredients.
  4. Chill dough for at least one hour in the refrigerator.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop dough onto the baking sheet, pressing each ball slightly and sprinkling sugar on top.
  7. Bake for 9 to 10 minutes until edges are golden but centers remain soft.
  8. Cool on a wire rack before icing with a mixture of powdered sugar, nutmeg, cinnamon, and eggnog.
