  • 1.5 lbs sweet potatoes (peeled and chopped)

  • 1 medium yellow onion (diced)
  • 1.5 lbs lean turkey meat
  • 2 tbsp tomato paste
  • 34 garlic cloves (minced)
  • 1 cup chicken or beef broth
  • 1 cup frozen peas (or other veggies)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil sweet potatoes in a large saucepan until tender (about 10 minutes). Drain and mash with sea salt, pepper, and Italian seasoning.
  3. In a nonstick pan, heat olive oil over medium-high heat. Sauté onions until translucent, then add minced garlic.
  4. Add lean turkey meat; cook until browned. Stir in tomato paste, oregano, smoked paprika, salt, pepper, and broth; simmer briefly before adding peas.
  5. Spread the turkey mixture into a baking dish and top with mashed sweet potatoes. Bake for 25-30 minutes until golden.
