  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1 cup pecans (toasted and chopped)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons brown sugar
  • 1/4 cup unsalted butter (melted)
  • 1 1/2 cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 350°F.
  2. Butter or spray a 9×13-inch baking dish.
  3. Roast pecans on a baking sheet for a few minutes until fragrant; let cool and chop.
  4. In a large bowl, combine sweet potatoes, brown sugar, eggs, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt; mash until smooth.
  5. Pour the mixture into the prepared baking dish.
  6. In another bowl, combine softened butter, cinnamon, flour, packed brown sugar, toasted pecans; mix until crumbly and sprinkle over the sweet potato filling.
  7. Bake for about 30 minutes until golden brown.
