  • 1 cup sweet corn kernels
  • 3 cups cooked rice
  • 1 cup sour cream
  • ½ cup crumbled Cotija cheese
  • 1 tbsp lime juice
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup thinly sliced red onion
  • 2 tbsp mayonnaise
  • 1 lime (cut into wedges)
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate chicken thighs in lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper for at least 15 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes per side until golden brown and fully cooked. Let rest before slicing.
  3. If using fresh corn, grill it on medium-high for about 10 minutes until charred; then remove kernels.
  4. In serving bowls, layer cooked rice as the base, followed by sliced chicken, grilled corn, red onion, drizzled sour cream mixture, Cotija cheese, lime wedges, and fresh cilantro.
