  • 3 cups shredded cooked chicken
  • 15 ounces corn kernels, drained
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded Monterey Jack cheese, divided
  • 1/4 cup crumbled cotija cheese, divided
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste
  • 6 ounces crushed tortilla chips

Instructions

  1. Preheat the oven to 375°F and grease a 9×13 inch baking dish.
  2. In a large bowl, combine shredded chicken, corn, cream cheese, sour cream, mayonnaise, 1 1/2 cups Monterey Jack cheese, half of the cotija cheese, cilantro, chili powder, garlic powder, cumin, lime juice, salt, and black pepper. Mix until well blended.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. In a small bowl, mix crushed tortilla chips with remaining Monterey Jack cheese and sprinkle over the casserole.
  5. Bake uncovered for 25 to 30 minutes until golden brown and bubbly.
  6. Allow cooling for 5-10 minutes before serving.
