  • 4 strips of chicken
  • 6 cups baby spinach
  • 1 small onion, sliced
  • 4 ounces sliced mushrooms
  • 4 hard-boiled eggs
  • 4 tablespoons chicken drippings
  • 3 tablespoons apple cider vinegar
  • 1/2 teaspoon minced garlic
  • 2 teaspoons spicy brown mustard
  • 2 tablespoons maple syrup (or honey)
  • Salt and pepper to taste

Instructions

  1. Cook the chicken strips in a medium skillet over medium heat until crispy. Remove from heat and reserve about four tablespoons of drippings.
  2. In the same skillet with drippings, combine apple cider vinegar, minced garlic, mustard, maple syrup, salt, and pepper. Whisk over low heat until warmed through.
  3. In a large mixing bowl, toss together baby spinach, sliced onions, mushrooms, and hard-boiled eggs.
  4. Drizzle the warm dressing over the salad while tossing gently to coat evenly.
