  • 1.5 cups sushi rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 pound sushi-grade ahi tuna, finely chopped
  • 3 tablespoons Japanese mayonnaise
  • 2 tablespoons Sriracha
  • Avocado slices for topping
  • Jalapeño slices for garnish

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan and bring to a boil. Lower heat, cover, and simmer for 15 minutes. Let sit for 10 minutes off heat.
  2. Mix salt, rice vinegar, sugar, and sesame oil in a bowl and fold into cooled rice.
  3. In a bowl, combine chopped tuna, mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice.
  4. Spread seasoned rice on a baking sheet lined with parchment paper; chill for at least 30 minutes.
  5. Cut rice into rectangles; top with spicy tuna mixture and avocado slices. Garnish with sesame seeds and jalapeños.
